yummy soup













I know the pictures aren't the best. I need to seriously work on my food photography skills, but trust me when I say this soup is super yummy. We made it two nights in a row because it was so easy and delicious.
Caldo Verde
Olive Oil
1 large onion, chopped medium
4 cloves of garlic, minced
6 cups of chicken broth
4 medium sized red potatoes, peeled and cut into 1 inch pieces
salt/pepper
8 ounces of chorizo or smoked kielbasa sausage cut into little bite size bits (we just used my parents favorite breakfast sausage that they had on hand)
4 cups of kale, stems removed and sliced into little spoon friendly bits. (I pull the leaves off with my hands and throw them in a large bowl of water to clean. Then roll up little stacks of the leaves and slice)
Heat 2 TB of oil in a large pot. Saute the onions over medium heat for 5 minutes. Then add the garlic and saute until fragrant, about 30 seconds.
Add 3 cups of the broth, the potatoes and a sprinkle of salt. Bring to a boil and then drop them down to a simmer for 15 minutes.
Remove the pot from the heat and mash the potatoes in the liquid with a potato masher until no large chunks remain and the potatoes thicken the soup slightly. Small chunks are acceptable and highly recommended.
Return the pot to medium high heat and add the remaining 3 cups of broth. Throw in the sausage and bring to a boil. Then reduce heat and simmer covered for 15 minutes.
Stir in kale and simmer until just tender, about 5 minutes.
Adjust the seasoning with salt and pepper.
Serve with a drizzle of olive oil and some freshly grated parmesean cheese on top.

Anniversary...



The fist picture is of our very first date here in key west 7 years ago. We have no idea who took the picture. I think you can tell from the photo that we were definitely drinking on our first date. I personally look like I was shook really hard and spun around a couple of times before the picture was taken (awesome). I love this picture nonetheless because how many people get to have a picture of the the first date with the love of their life.
The second picture is a few nights later when Drew surprised me with flowers at the restaurant I was working at. I had forbade him to come because I didn't want him to see me in my goofy hat and uniform. I eventually forgave him...then I married him.
Six years and one beautiful baby later I am still madly in love with you.

Unfortunately our little birthday boy has not being feeling well this week. He was knocked down by his first official stomach bug. This is the poor little sad face I have been looking into all week long. Poor baby.

48 weeks...













We are oh so close to walking here. Owen can stand on his own, and he will even walk with someone holding just one of his hands. A few hesitant solo steps have been taken here and there (most of them towards his daddy) but he still prefers to drop down to the ground and crawl.
Expect some walking video soon.

Trick or Treats (47 weeks...)











Drew and I took Owen to the key west library for some Halloween fun. The bubble machine was a BIG hit. As you can see we didn't get much of a costume for Owen this year. Most costumes for babies are like big furry snow parkas, and they are way to hot for an island Halloween. We opted for a little monster onesie (with glow in the dark teeth).



Masquerade Parade













A mommy friend of mine lives in one of the most beautiful conch houses in key west. We were lucky enough to be invited over to her super comfy porch to watch the craziness of the annual masquerade parade as it went by.
